ANÁLISE DO PÓS-COLHEITA DO CAFÉ ARÁBICA APLICANDO O CICLO PDCA COM O FOCO DA MELHORIA DA QUALIDADE

Abstract

This work is based on bibliographic research on the definition of quality, PDCA cycle, coffee quality and the factors that influence it. Its objective is to determine corrective actions in the post-harvest period of coffee aimed at improving quality. These actions will be managed through a PDCA cycle. Thus resulting in the aforementioned theme: the use of the PDCA cycle for better management of post-harvest coffee actions. In the first instance, the definition of quality will be dealt with, followed by the definition of what a PDCA cycle is. Following the line of reasoning, the stages of pre-processing of the coffee, the stages of drying, processing and storage that form the post-harvest will be shown. Subsequently, the factors that influence the quality of the coffee will be addressed, as well as the defects that affect the quality along with its origin. Finally, it will be presented to the proposal for the implementation of the PDCA cycle to reduce the incidence of defects in the quality of coffee.
